Eggs are one of the most versatile foods. They can be prepared in so many ways, as well as used as an ingredient for breakfast, lunch, dinner and dessert recipes. My favorite way to enjoy eggs in hard-boiled because it's a make-ahead breakfast, snack, salad topper, an appetizer alone in the form of deviled eggs, pickled eggs, in potato salad and even in ramen noodle soup.

Coming in second, at a close tie, are over-easy eggs and omelets. There's nothing like dipping toast in the yolk of an over-easy egg. Then, there's the omelet. It's basically an egg calzone in my opinion, sans the carbs. There are so many ingredient options when it comes to perfecting the right omelet for you.

One of my favorite omelet concoctions contains spinach, my favorite vegetable, avocado for its heart-healthy fatty acids and bacon, because who doesn't love bacon? This keto-friendly omelet recipe can be easily adapted for 1-2 people, not only that but it's quick and easy to prepare with only a few ingredients that might not be staples in your household.

Not only can you make this as an open-faced omelet, as well as a traditional omelet, but you can also make a frittata (where the fillings are mixed in with the eggs in the pan, rather than folded in the center), cut in slices like a pizza and serve. You can also fold this into a “wrap”, burrito-style. Of course, you would still eat it with utensils since holding an egg-based wrap is not ideal.
