Grilled Eggplant with Mozzarella, Tomatoes, and Basil

If you love eggplant, but you haven't been able to master it at home, this grilled recipe is for you. Combined with tomatoes and fresh mozzarella cheese, it's easy to make and it's a great way to get your fruits and veggies in.
Ingredients- 1 lb. Eggplant
- 3 Tbsp. Olive Oil
- 1/2 lb. Fresh Mozzarella Cheese Ball
- 3 large Tomatoes, Firm and Almost Ripe
- 1 bunch Fresh Basil for Garnish
- Rinse and dry the eggplant.
- Trim off ends of eggplant.
- Slice eggplant into 1/2 inch thick slices.
- Brush each slice with oil and salt, then set aside.
- Slice mozzarella using a tomato slicer or mozzarella slicer, then set aside.
- Rinse and dry off tomatoes.
- Slice with a tomato slicer.
- Season with salt and pepper, then set aside.
- Rinse and remove stems of basil.
- Prepare a medium-high charcoal or gas grill.
- Grill eggplant on both sides until golden-brown with grill marks and tender, about 3-4 minutes on each side.
- Remove eggplant from grill and season with salt and pepper.
- Brush tomatoes lightly with olive oil.
- Grill tomatoes for 1-2 minutes on each side, until warmed.
- To serve, stack the eggplant, then tomato, then mozzarella with fresh basil leaves in between and on top.
- Drizzle with olive oil and balsamic vinegar or a balsamic vinaigrette salad dressing.
- Season with salt and pepper to taste, if needed.
